How to deal with extra glue?
I'm happy with the design and the inlay letters fit well. I noticed after the glue dried it was really hard to get all of it off for a clean surface. I should have double-checked and wiped off the excess before it dried.
Any tips for dealing with this? Do I just need to keep sanding?
Also, if you can get to it while it's wet a wet paper towel works best as most wood glues are water soluble when wet. If it's starting to get to the gummy/semi dried stage you're best off just waiting for it to fully dry and use a chisel like @John mentioned.

I find that a sharp chisel works better than sanding for glue (cuts instead of smearing it around). Especially as a first pass.

Yes, that too. I had assumed it was dry-ish glue at least.

I wipe it with a paper towel when it's wet and then afterwards I sand the rest off.
