The hole in the middle is the vent. You can put a ball bearing on top of it to essentially create a gravity assisted valve, or come up with your own inventive solution.

I fill the jar with cucumbers (russian picking cukes are my fav right now) then I add garlic and a bunch of random herbs, warm water, a teaspoon of vinegar (to kickstart the ferment) and a good amount of salt. You want to have between 2% and 5% salt by weight (including the veggies)
